Gyuto 240mm PettyThis Warikomi Nashiji Gyuto feature a long and tall blade, good distal taper, and thin tip. Flat profile with a slight curve toward the tip. The Warikomi is made from 135Cr3 core steel with soft steel cladding. Forged to shape and to geometry the bevels are ground on water cooled grinding stone with a satin finish. Warikomi is a similar technique to San mai but the soft steel is heated and split like a hot dog bun. Then, a piece of hard steel core
