Many producers make ancestrale method sparklers as a kind of a fun and playful side project, but arent really experts in the style. This is absolutely not the case with Domaine de Gimios, of farmer and winemaker Anne Marie Lavaysse, who began practicing biodynamics in the late 90s and hasnt stopped since (in her mid 80s!).
